Fish and Chips with Garlic Mayonnaise
A crispy cod with hot potatoes from the oven and spicy hot garlic dip. The perfect dinner for fish fans and those who want to become one.

Ingredients
Serves 4- 1000 g potatoes (firm cooking)
- 1 branch rosemary
- 1 branch thyme
- 1 tsp olive oil
- 70 g wheat flour
- 2 egg
- 1 tbsp white wine vinegar
- 100 ml Dark beer
- 1 tsp mustard
- 100 ml sunflower oil
- 1 clove garlic
- 2 Cod Fillets
- pepper
- Frying Oil

Wash the potatoes and halve or quarter them depending on their size. Place on a baking tray and sprinkle with a little olive oil, salt, pepper and herbs. Bake in the oven for 20 to 25 minutes at 200 °C convection oven.

100 ml Dark beer

Stir the flour, egg, dark beer, vinegar and pepper into a smooth batter and set aside.

1 tsp mustard

For the garlic mayonnaise, place the egg, mustard, pepper, sunflower oil and finely chopped garlic in a narrow measuring jug and slowly blend with a hand blender, starting from the bottom and working upwards.

2 Cod Fillets

Heat the frying fat in a pan or pot. It should be about 2 cm deep. Meanwhile, portion the fish fillets, dust with flour and pull through the batter. Fry in the hot fat for 1 to 2 minutes, depending on the thickness.

Serve the baked fish with the potatoes and garlic dip.
