Salmon with Glazed Carrots and Pickled Onions
A perfectly balanced taste experience from the north

Ingredients
Serves 4- 4 carrots
 - 1 red onion
 - 1 bunch dill
 - 4 tbsps olive oil
 - 600 g salmon
 - 1 pinch of sugar
 - 50 ml apple cider vinegar
 - 50 ml water
 - 1 lemon
 - salt
 - pepper
 
Instructions

Preheat the oven to 200 °C.

										4 carrots
 - 
										1 red onion
 - 
										1 bunch dill
 
Cut the carrots into thin slices and the onion into half rings. Roughly chop the dill.

										2 tbsps olive oil
 
Put the carrots in a pan with some olive oil and heat over medium heat. In a separate small pan, sauté the onion and dill with a little olive oil.

										600 g salmon
 - 
										2 tbsps olive oil
 - 
										2 piches of salt
 - 
										2 piches of pepper
 
Meanwhile, portion the salmon and massage with olive oil, salt and pepper. Cook in the preheated oven for 8 to 10 minutes.

										1 pinch of sugar
 - 
										1 pinch of salt
 - 
										1 pinch of pepper
 - 
										50 ml apple cider vinegar
 - 
										50 ml water
 
Season the carrots with sugar, salt and pepper. Deglaze the onions with apple cider vinegar and water and simmer for another 5 minutes.

										1 lemon
 
Grate the zest from the lemon and set aside.
 - 
										
 - 
						
Arrange the carrots and salmon with the onions. Finish with olive oil, lemon zest and a little lemon juice.
