Chicken on Creamy Polenta and Steamed Leek Vegetables
Who doesn't know it? You only use the white and light green parts of the leek, the green ends often end up in the organic waste. At most in a broth. In this recipe, we mainly use the green parts. The leeks are steamed with some white whine until nice and soft. Together with the creamy polenta and the tender chicken, it's a great combination and thus a perfect dinner.

Ingredients
Serves 4- 1000 ml water
- 150 g Polenta
- 1 tbsp olive oil
- 1 onion
- 1 leek (grün)
- 3 tbsp oil
- 100 ml white wine
- 4 chicken breasts
- 1 branch rosemary
- 1 branch thyme
- salt
- pepper

Heat the water in a large pot. When it boils, stir in the salt, oil and polenta with a whisk. Turn the heat down to the lowest setting and leave to soak for 25 minutes.

In the meantime, cut the onion and the green part of the leek into thin half-rings. Heat the oil in a pan and fry the onion for 2 minutes. Add the leek and sauté for another 3 minutes. Deglaze with white wine and reduce. Add water and simmer for 15 minutes. Season with salt and pepper.

Chop the herbs. Heat the oil in a pan and fry the chicken for 2 minutes on each side. Then add the butter and herbs to the pan and pour over. Salt and pepper the meat and arrange everything on the plate.
