Shrimps Party Food
An eye-catcher on every party buffet
Ingredients
Serves 16- 150 g flour
- 100 ml water
- 1 red onion
- 2 cm ginger
- 1 bunch coriander
- 1 clove garlic
- ½ lemon
- 8 tbsps olive oil
- 150 g mangos
- ⅓ red chili
- 1 tsp curry powder
- 100 g curd
- 16 prawns (pre-cooked)
- 4 date tomatoes
- salt
- pepper
Instructions

Knead flour, water and a little salt into a dough and leave to rest for 10 minutes.

Meanwhile, dice the onion and chop the ginger, coriander (including stems) and garlic. Squeeze the juice from the lemon and mix everything together in a bowl with salt, pepper and olive oil to make an onion salsa.

150 g mangos

Put the mango, oil, chilli, curry powder, a few squirts of lemon juice and a pinch of grated lemon zest in a container and puree to a sauce.

Cut the dough into equal-sized pieces and roll out thinly. Bake in a hot, coated pan on both sides.

100 g curd

16 prawns (pre-cooked)

Spread the tortillas with curd, top each with 1 tsp mango curry sauce and onion salsa and serve with 1 prawn and a quarter of a tomato.
