Mediterranean Chickpea Salad
Nutritious and quick to make, this chickpea salad tastes absolutely fantastic. Perfect as a side dish for summer barbecues, to take along on picnics or as a delicious lunch for the office.

Ingredients
Serves 4- 220 g chickpeas (Abtropfgewicht)
- ½ red onion
- ½ glass dried tomato
- 4 tbsps Oliven
- ½ glass Artichoke
- 1 branch thyme
- ½ bunch parsley
- ½ lemon
- 5 tbsps olive oil
- salt
- pepper
Instructions

Rinse the chickpeas in a sieve and put them in a bowl. Cut the red onion into small cubes and add to the chickpeas.

½ glass Artichoke
Roughly chop the dried tomatoes, olives and artichokes with a knife. Add to the chickpeas in the bowl.

1 branch thyme

½ bunch parsley

Chop the thyme and parsley. Grate the lemon zest and squeeze out the juice. Mix with the remaining ingredients and add the olive oil.

Season with salt and pepper and serve. A slice of toasted bread goes well with the salad.
