South Tyrolean Spinach Curd Dumplings

The dumplings taste great on a colourful salad plate as a lunch dish or as a delicious dinner in good company. They are very easy to prepare and can also be frozen as a stock.

Ingredients

16 dumplings

Instructions

    • 1 onion
    • 20 g butter
    • 200 g spinach

    Cut the onion into small cubes and sauté in the butter for 4 minutes. Add the spinach and simmer on low heat for another 6 minutes.

    • 200 g curd
    • 3 slices white bread

    Meanwhile, place the curd in a large bowl. Crush the bread in a blender and transfer to the bowl as well.

    • 2 piches of salt
    • pepper
    • nutmeg
    • 1 egg
    • 70 g breadcrumbs
    • 2 tbsps flour

    Remove the spinach from the heat and blitz with a blender. Pour into the bowl and season with salt, pepper and nutmeg. Add the egg, flour and breadcrumbs and mix the mixture well. Form dumplings with two tablespoons.

    • 50 g butter
    • parmesan

    Cook the dumplings in boiling, salted water for 8 minutes. In the meantime, melt the butter and grate the Parmesan cheese.

Tip

  • The spinach can preferably also be frozen spinach.
