Tofu with Wok Vegetables and Rice

A quick tofu dish with colourful vegetables

Serves 4


    • 400 g tofu
    • 400 g basmati rice

    Pat the tofu pieces dry and cut into slices. Prepare the rice according to the instructions on the packet.

    • 1 cm ginger
    • 1 clove garlic
    • 2 spring onions
    • 1 red chili
    • 4 tbsps soy sauce
    • 3 tbsps oil

    Chop the ginger and the garlic clove, cut the spring onion into rings and chop the chilli. Put everything in a bowl, add the soy sauce, oil and the tofu.

    • 1 zucchini
    • 1 red pepper
    • 150 g mushrooms

    Cut the zucchini into thin half-rings, cut the peppers into small pieces and cut the mushrooms into fine rings.

    • Fry the tofu pieces until crisp and remove from the pan. Add the vegetables to the pan and fry for about 7 minutes. Serve with rice, tofu and chilli.
