Recipe: Vegetable Broth

Vegetable Broth

A very healthy soup that can also be used for other dishes.

Vegetable Broth

Serves 4


    • 1 onion

    Cut the onion in half and fry heavily on the cut side in a large soup pot without fat.

    • 2 carrots
    • ½ leek
    • 2000 ml water

    Cut the carrots and leeks in half lengthwise and put them in the pot with the water and bring to the boil.

    • 1 branch rosemary
    • 1 branch thyme
    • ½ red chili
    • 10 peppercorns

    Add the herbs, chilli and peppercorns. Reduce the heat and let the broth simmer gently for about 30 minutes.

    • salt

    Finally, season with salt and serve or continue to use.


  • The broth is wonderful for infusing risottos or soups (e.g. mushroom risotto oder pumpkin risotto).

  • A larger quantity can be frozen very easily and stored in the freezer.
