Fresh Spinach Tortillas
A colourful dinner - perfect for a nice get-together

Ingredients
Serves 4- 200 g spinach
- 200 g flour
- ½ red onion
- 1 Coriander Hummus
- 1 pack feta
- 100 g rocket salad
- 2 corncobs
- salt
Instructions

Mash the spinach, add the flour and salt and knead into a dough. If the dough is too dry, add a few drops of water. If it is too liquid, add flour. Leave to rest for 10 minutes.

- 1 Coriander Hummus

Cut the onion into half rings, make the hummus and prepare the feta and rocket.

Cut the dough into equal-sized pieces and roll out thin and round. Heat a non-stick frying pan and fry the tortillas one by one without oil. Turn them over after 1 to 2 minutes and fry the other side.

2 corncobs
Then fry the corncobs in a little oil and cut down the kernels. Arrange the tortillas with hummus, rocket, feta, corn and onions and serve.
