Potato Mushroom Gröstl

Gröstl is a traditional South Tyrolean farmer's dish with pan fried potatoes. We added some mushrooms to change it up a little.

Ingredients

Serves 4

Instructions

    • 1000 g potatoes

    Halve the potatoes and boil them in salted water for about 20 minutes.

    • 1 onion
    • 250 g mushrooms
    • 60 g leek

    Meanwhile, dice the onion, quarter the mushrooms and cut the leek into rings.

    • 2 tbsps oil

    Peel the cooked potatoes and cut them into slices. Place in a frying pan heated with oil and fry.

    • 1 leaf laurel
    • 1 branch majoram
    • salt
    • pepper

    After about 5 minutes, add the onion pieces and after another 5 minutes the mushrooms. Add the spices to the pan and fry for another 5-10 minutes. Finally, fold in the leek and serve.

Tip

  • Very good as a leftover meal when you have cooked potatoes left over from the day before.
