Recipe: Gnocchi

Gnocchi

The base recipe homemade gnocchi just like at the Italian restaurant. Much better than the ready-made ones from the supermarket, and less work than you might think.

Ingredients

Serves 4

Instructions

    • 750 g potatoes (floury)

    Cook the potatoes in the boiling water for 15 to 20 minutes.

    • 220 g flour
    • 1 tbsp starch
    • salt
    • 3 tbsps semolina

    Once the potatoes are cooked soft, peel them while hot and mash them with a potato masher. Add the flour, starch and salt and knead everything together. On a floured work surface, shape into long strands about 1 cm in diameter and cut into small gnocchi. Then roll them in the semolina.

    Cook the gnocchi in boiling, salted water until they float to the surface.

Tips

  • It is worth cooking a larger quantity and freezing it in the freezer.
