Ratatouille
A classic Mediterranean vegetable dish
Ingredients
Serves 4- 1 onion
- 2 tbsp olive oil
- 800 ml canned tomatoes
- 1 zucchini
- 1 aubergine
- 2 tomatoes
- 1 red pepper
- 1 yellow pepper
- basil
- chili powder
- salt
- pepper
- parmesan
Instructions

Cut the onions into small cubes, put them in a pot and fry them together with olive oil until golden brown.

Add the canned tomatoes and simmer together for 20 to 30 minutes on medium heat. Season with basil, chilli, salt and pepper.

1 red pepper

1 yellow pepper
In the meantime, slice the zucchini, aubergine, tomatoes and peppers.

Spread about half of the tomato sauce in a baking dish, layer the cut vegetables on top and spread the remaining tomato sauce on top.

Als oberste Schicht geriebenen Parmesan verstreuen, mit 1 EL Olivenöl übergießen und die Form bei 180 bis 200 °C für ca. 30 Minuten in den Ofen stellen.

Tip
It goes well with couscous or polenta.
