Salmon with Potato Celery Mash and Romanesco
A delicious salmon dish
Ingredients

Bring the water to the boil in a pot and salt it.

1 romanesco

½ celery
Cut the romanesco into pieces. Peel the potatoes and celery and cut into small cubes.

Blanch the romanesco in hot salted water (remove after about 3 to 5 minutes and cool in cold water).

Then add the potato and celery pieces to the hot water and boil for about 15 minutes until soft.

Toss the cooled romanesco with a little vegetable oil in a pan and season with salt and pepper.

600 g salmon
Portion the salmon and season with salt and pepper. Fry in a pan with a little oil for 5 minutes on each side.

250 ml milk

Heat the milk in another pot, add the drained potatoes and celery pieces and mash to a pulp. Stir in the butter, season with salt and pepper and serve.
