Salmon with Potato Celery Mash and Romanesco

Salmon with Potato Celery Mash and Romanesco

Ingredients

Instructions

    • salt

    Bring the water to the boil in a pot and salt it.

    • 1 romanesco
    • 700 g potatoes (floury)
    • ½ celery

    Cut the romanesco into pieces. Peel the potatoes and celery and cut into small cubes.

    • Blanch the romanesco in hot salted water (remove after about 3 to 5 minutes and cool in cold water).

      • Then add the potato and celery pieces to the hot water and boil for about 15 minutes until soft.

        Toss the cooled romanesco with a little vegetable oil in a pan and season with salt and pepper.

        • 600 g salmon

        Portion the salmon and season with salt and pepper. Fry in a pan with a little oil for 5 minutes on each side.

        • 250 ml milk
        • 50 g butter
        • salt
        • pepper

        Heat the milk in another pot, add the drained potatoes and celery pieces and mash to a pulp. Stir in the butter, season with salt and pepper and serve.
