Tofu with Wok Vegetables and Rice
A quick tofu dish with colourful vegetables

Ingredients
Serves 4- 400 g tofu
- 400 g basmati rice
- 1 cm ginger
- 1 clove garlic
- 2 spring onions
- 1 red chili
- 4 tbsps soy sauce
- 3 tbsps oil
- 1 zucchini
- 1 red pepper
- 150 g mushrooms

400 g basmati rice
Pat the tofu pieces dry and cut into slices. Prepare the rice according to the instructions on the packet.

Chop the ginger and the garlic clove, cut the spring onion into rings and chop the chilli. Put everything in a bowl, add the soy sauce, oil and the tofu.

1 zucchini

Cut the zucchini into thin half-rings, cut the peppers into small pieces and cut the mushrooms into fine rings.

Fry the tofu pieces until crisp and remove from the pan. Add the vegetables to the pan and fry for about 7 minutes. Serve with rice, tofu and chilli.
