Broccoli Soup
With this soup, no more broccoli stem ends up in the trash
Ingredients
Serves 4- 1 onion
- ¼ celery
- 1 brokkoli (stem)
- 1 potato
- 1 tbsp oil
- 1 leaf laurel
- 1500 ml water
- 4 slices bread (from yesterday)
- salt
- pepper
- balsamic vinegar

Cut the onion, celery, broccoli and potato into large cubes.

Heat vegetable oil in a medium saucepan and sauté the onion for 2 to 3 minutes. Add the celery, broccoli and potatoes and cook for another 3 minutes.

1 leaf laurel

Now add the laurel and pour in cold water.

Bring the soup to the boil and then simmer on medium heat for 20 minutes until soft.

In the meantime, dice stale bread and toast it in a pan without fat until crisp.

Season the soup with salt and pepper and puree with a hand blender. Serve with bread cubes and a few drops of balsamic vinegar.

Tips
Depending on the size of the potato, you may need to add more liquid after mashing.
The florets of broccoli can of course also be used.
