Broccoli Soup

With this soup, no more broccoli stem ends up in the trash

Ingredients

Serves 4

Instructions

    • 1 onion
    • ¼ celery
    • 1 brokkoli (stem)
    • 1 potato

    Cut the onion, celery, broccoli and potato into large cubes.

    • 1 tbsp oil

    Heat vegetable oil in a medium saucepan and sauté the onion for 2 to 3 minutes. Add the celery, broccoli and potatoes and cook for another 3 minutes.

    • 1 leaf laurel
    • 1500 ml water

    Now add the laurel and pour in cold water.

    • Bring the soup to the boil and then simmer on medium heat for 20 minutes until soft.

      • 4 slices bread (from yesterday)

      In the meantime, dice stale bread and toast it in a pan without fat until crisp.

      • salt
      • pepper
      • balsamic vinegar

      Season the soup with salt and pepper and puree with a hand blender. Serve with bread cubes and a few drops of balsamic vinegar.

    Tips

    • Depending on the size of the potato, you may need to add more liquid after mashing.

    • The florets of broccoli can of course also be used.
