Caramelized Onion Pasta
Very tasty comfort food. The creaminess of the pasta combined with the sweetness of the onions and the somewhat sharp acidity of the aceto balsamico form a wonderful balance. Simply prepared – simply a delight.

Ingredients
Serves 4- 4 tbsps olive oil
- 2 onions
- 4 cloves garlic
- ¼ tsp caraway seeds
- ½ tsp red chili
- 1 leaf laurel
- 1 branch thyme
- 1500 ml water
- 4 tbsps balsamic vinegar
- 500 g whole grain pasta
- pepper
- salt
Instructions

Finely slice the onions, chop the garlic and caramelise both in the oil for 20 minutes on medium heat.

In the meantime, prepare the spices and herbs in a bowl and bring the water to the boil.

Once the onions have caramelised, add the spices and fry for 2 minutes. Then deglaze with balsamic vinegar and reduce for 1 minute. Increase the temperature to high.

500 g whole grain pasta

Add the noodles to the onions, stir once and pour in the water so that they are slightly covered. Salt the water. Cook the pasta according to the instructions on the packet, stirring and adding water as needed.
