Cinnamon Stars
These delicious biscuits will make your pre-Christmas season more cheerful.
Ingredients
30 cookies- 3 Egg whites
- 200 g icing sugar
- ½ lemon
- 100 g hazelnuts (grated)
- 200 g almonds (grated)
- 2 tsps cinnamon
- ½ tsp clove powder
- salt

200 g icing sugar
Beat the egg whites with a pinch of salt until foamy. Add the icing sugar and beat for about 10 to 15 minutes with a mixer or food processor until stiff. The mixture should be very creamy.

Squeeze the juice from the lemon and grate the zest. Add both to the mixture. Put 1/3 of the mixture into a bowl, which will be used later for brushing.

100 g hazelnuts (grated)

200 g almonds (grated)

2 tsps cinnamon

½ tsp clove powder
Mix the other part of the mixture with the hazelnuts, almonds, cinnamon and clove powder to form a dough. Cover and place in the fridge for about 30 minutes.

Preheat the oven to 170 °C top/bottom heat. Put some icing sugar on the work surface (this helps to roll out the dough), roll out the dough to about 1 cm thick and cut out stars. Brush with the egg white mixture and bake in the oven for 10 to 15 minutes.
