Fruity Pumpkin Salad
The eye is guaranteed to eat along with this colourful salad plate. Orange pumpkin, pink grapefruit and purple pomegranate seeds on a green salad bed are an absolute eye-catcher. The necessary vitamins for the cold season are included in this dish.

Ingredients
Serves 4- 1 pumpkin
- 1 branch rosemary
- 7 tbsps olive oil
- 200 ml water
- 1 pomegranate
- 2 grapefruits
- 1 cm ginger
- ½ lemon
- 2 tbsps honey
- 1 pack rocket salad
- salt
- pepper

Cut the pumpkin into large cubes, place in a pan with the rosemary and sauté with a little olive oil for 5 minutes. Then deglaze with water and cook for another 15 minutes until soft.

1 pomegranate

2 grapefruits

In the meantime, core the pomegranate, fillet the grapefruit and finely chop the ginger.

2 tbsps honey

For the dressing, squeeze the juice of half a lemon, put it in a bowl and mix with honey, olive oil, salt and pepper.

Add the rocket, pomegranate seeds, grapefruit and pumpkin to the dressing, fold in and serve.
