Gnocchi in Pumpkin Sauce
This colourful feel-good meal brings colour into the grey season. Quick and freshly prepared, these gnocchi in pumpkin sauce taste indescribably good. A little green parsley creates colour accents and provides a fresh herbal note. A meal for the whole family.

Ingredients
Serves 4- 1 onion
- 1 cm ginger
- 1 pumpkin (z. B. Hokkaido)
- 10 amaretti di saronno
- 100 ml white wine
- 200 ml vegetable stock
- 750 g Gnocchi
- ½ bunch parsley
- olive oil
- salt
- pepper
Instructions

Chop the onion and ginger into small cubes. Cut the pumpkin into small cubes as well. Roughly crush the amaretti (they will be used later as a topping).

Heat a pan with some olive oil and fry the onion and ginger for 2 minutes. Add the pumpkin cubes and stir-fry for 3 minutes. Deglaze with white wine and reduce. When the alcohol has evaporated, add the vegetable stock and simmer for 10 minutes. When the pumpkin is soft, mash lightly with a wooden spoon and season with salt and pepper.

Meanwhile, cook the gnocchi in boiling, salted water until they float to the surface.

½ bunch parsley
Add a little gnocchi water to the sauce, stir and add the gnocchi. Serve with parsley and the amaretti crumbs.

Tip
We recommend making the gnocchi yourself. Homemade gnocchi taste much better than store-bought ones and are great to make in large quantities and then keep in the freezer.
