Vegetable Broth
A very healthy soup that can also be used for other dishes.
Ingredients
Serves 4- 1 onion
- 2 carrots
- ½ leek
- 2000 ml water
- 1 branch rosemary
- 1 branch thyme
- ½ red chili
- 10 peppercorns
- salt
Instructions

Cut the onion in half and fry heavily on the cut side in a large soup pot without fat.

Cut the carrots and leeks in half lengthwise and put them in the pot with the water and bring to the boil.

1 branch thyme

Add the herbs, chilli and peppercorns. Reduce the heat and let the broth simmer gently for about 30 minutes.

Finally, season with salt and serve or continue to use.

Tips
The broth is wonderful for infusing risottos or soups (e.g. mushroom risotto oder pumpkin risotto).
A larger quantity can be frozen very easily and stored in the freezer.
