Quick Basil Pesto
Prepared in just a few minutes, this quick basil pesto adds the necessary variety to classic summer dishes. The fresh green also provides great colour accents.

Remove the basil leaves from the stem and put them in a blender with the olive oil. Grate some lemon zest into the blender and add lemon juice to taste. Season with salt and pepper and chop everything. Add a little more olive oil if necessary.
